This place is special Really unique “stir noodles”. After a bit of research, I’ve found that they’re actually called mazesoba/mazemen. ???????? They’re a take on “dry ramen” – no broth, just noodles coated in a rich, flavour-packed sauce and topped with a rainbow of textures. At the centre is raw egg yolk – once you mix it in, it ties everything together. Around it, each topping has a job to do: • Minced pork brings savoury depth. • Crispy garlic or tempura bits add crunch. • Fresh spring onions and leeks cut through the richness. • Seaweed gives a hit of umami. • Coriander adds a fresh, herbal lift. You stir it all up until it becomes a glorious, messy, golden tangle of flavour. Mazesoba actually started in Nagoya in the early 2000s, when a ramen chef accidentally served his noodles without broth – and people loved it. And honestly: they’re amazing. You have to try them. I recommend the 3 spicy with melted cheese. I add fried garlic, fried onions and the coriander. You get other options too. It’s the very welcome oimeshi at the end that really makes you happy. It’s a large spoon of rice, just enough, to help soak up the sauce and clean the bowl. Like a bit of bread to mop the bowl of soup or pasta, but even better. I genuinely can’t recommend this place highly enough. I honestly think if this place was in somewhere like Singapore it would be given a Michelin star. It’s that good.

This has become my favourite noodle place in Nottingham. If you like authentic Chinese / Japanese restaurants like Shanghai Shanghai and everyday people, this is a must go! The flavours are great and the spicy version of the noodles really hits the spot. I appreciate that they seem to have a limited menu but the flexibility in customising your noodles with different toppings, cheese and spicy level is enough for me.

Yummy! Ordered the spicy one, you can go up to 4. You are also able to change the raw egg which comes with it by default to onsen egg (kind of like a had boiled egg), which I did. Adding the chilli oil on the side makes the noodles even better in my opinion. There’s also vegan menu available. After finishing the noodles, there were some sauce left which you will be provided with a little rice to soak them up, I think this is such a brilliant idea. I think it got a little salty towards the end as all the sauce kind of sank to the bottom of the bowl, but I still really like the noodles. Would definitely go again

Tried to go to this place the other day at tea time with some friends but queue was almost out the door so decided to come back at lunch time and we were able to get seats. There's about 12 seats though so definitely don't come here at peak times unless you are prepared to queue and take away. There's free water on each table bench and the servers are very friendly, they seem very hard working and are happy to explain the menu to you. ALSO IMPORTANT they don't take card here either cash or bank transfer. You fill out your order on a piece of paper on the table and hand it to the waiter and tbf the food came out in under 15 mins. There are also vegan friendly options as well and they cater to allergens. I had the cheesey stir noodles, they were okay, each bite was very fishy tasting which was wasn't really my taste I was still able to eat it all. from the review I thought this place was meant to be super delicious so was just suprised it wasn't . It was not the best japanese food I have had, just not my preference to be honest I would have thought there would have been more variety of flavor in the dish. from the review lots of people and enjoy it a lot so definitely give it a try. We were given free rice and miso soup, the price was okay £11.50, considering the noodles are handmade that's fair enough. Anyways nice to see a successful small business in beeston and it brings something unique to the area.

The best noodles I've had to date. The noodles are handmade and have a lovely bounce to them, and the spicy sauce was really tasty. Lots of options for toppings to customise, you also get miso soup and a small portion of rice at the end to soak up the remaining sauce. One of the most satisfying meals I've had in a very long time.

This Japanese udon restaurant is truly amazing! There aren't many seats, only about six doubles. During busy times, you might have to wait in line. While their menu is simple, it's also expertly prepared and excellent. The menu consists of four udon dishes, each with cheese and spicy sauce, and you can add toppings like kimchi and yam for an additional fee. The handmade udon is incredibly flavorful, and the udon sauce is perfectly balanced. I personally think the cheese adds a layer of flavor. I highly recommend giving it a try!In addition, after you finish eating the udon, the store will give you a mouthful of rice for free, so that you can taste the remaining sauce in the bowl again with a different taste.

Authentic Japanese food, authentic Japanese vibe. This isn't a casual hang out for ages restaurant, this is an in-out noodle bar that does one thing with different toppings, and it does this extremely well. I had the basic option with some extra meat and veggies, hot green tea. Great food, great value, was very busy and has a small amount of space for traditional Japanese queueing in the restaurant. Worth the short wait!

Great food, had the noodles with melted cheese- i had the pork option and my wife the tofu option. Highly recommend this place been wanting to go for a while now and finally got to come and try it, will definitely be returning. Good service, staff very friendly and attentive.
